Hawaiian Haystacks


This is a classic and fun recipe for children because they are able to choose what they want to add to the "haystack."  This recipe is from my mother-in-law who acquired it from her friend Carol Dean.  You can use no-fat or low-fat ingredients for the sauce if you want to make it a low-fat recipe.  I prefer full-fat on this recipe. 

Recipe:
2 cans cream of chicken soup
1 cup sour cream
1 cup grated cheddar cheese
1 cup mayonnaise
2 cups cooked, diced chicken
Cooked rice

Mix together soup, sour cream, cheese, and mayonnaise in saucepan and heat until cheese melts and the mixture begins to bubble.  Add chicken to mixture.  Put a mound of rice on individual plates and top with chicken mixture.  Put the below-mentioned "haystack toppings" in individual bowls and top the "haystacks" with the toppings.
Haystack Toppings:
Tomatoes, green onions, black olives, pineapple tidbits, coconut, slivered almonds, and chow mein noodles.

  3. Yummy and this is a "quick" meal. I roast chicken breasts each week so I have chicken to make a fast dinner with. I think my guys would love this!

    That "H"aystack recipe certainly sounds like it would be a treat to the mouth! So many textures and flavors...I will have to try this one! Thanks for sharing your "H" word with us today.

    This is my first visit to your place, so I am off to take a look at some of your posts...Don't tell Ms. Matlock that I am playing "H"ooky for awhile...(well, there are alot of students in class today--maybe she won't notice that I am gone)!!
