I have finally begun my Christmas baking and candy making. This coconut bread is a recipe that I received from my mother--in-law Geniel. If you are a coconut lover, you need to try it -- intense coconut flavor. Of course I love the glaze that crystallizes and moistens this cake to make it special.
I made these in the new Nordic Ware brownie pan that I won in a giveaway from Lindsay and Brooks at Our Family Treat. I am a huge fan of the intricate Nordic Ware pans -- thanks Lindsay and Brooks.

Coconut Bread
Bread
4 eggs, beaten well
1 cup vegetable oil
2 teaspoons coconut extract
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sugar
1 cup coconut
3 cups flour
1/2 teaspoon baking soda
1 cup buttermilk
Mix all the ingredients together. Bake in 2 large pans at 325 degrees for 1 hour and 15 minutes. For the mini brownie pan, it took about `15 minutes and made about 30 individual cakes. I used about one scoup and one half of my Pampered Chef cookie scoop.
Glaze
1 cup sugar
1/2 cup water
2 tablespoons butter
1 teaspoon coconut extract

Yummy! I love coconut anything. It seems people either love coconut or just hate it. These are cute and look so moist. A definite must try for me.

Ohhhhh Joni!!! I am an absolute coconut junkie. I have an on going love affair with the stuff. I've told my kids that in order to live at my house they have to love 3 things... coconut, nuts and chocolate! Luckily they all do. This recipe is definitely on my short list! Thanks.
