Buttermilk Spice Cake Covered With Rum Caramel Sauce/Walk with Zoulah and Beaulah


Zoulah extends a Warm Witchy Welcome to her Bewitchen Kitchen and to Red Couch Recipes today. 


We are glad you have stopped by for a visit.  This is the dessert that Zoulah served Beaulah when they got together last week for a luncheon and a walk.  Zoulah loves a spice cake in the fall; one that has buttermilk in it is even better, but what she really LOVES is the rum caramel sauce.  Several times I caught her dipping her warty finger into the sauce!  It was the day that both of them acquired LEGS!  After the recipe and instructions for this cake, I will highlight some pictures of their WITCHY WALK in my backyard.  They loved exploring and spending time together.



         Buttermilk Spice Cake Covered With Rum Caramel Sauce

Zoulah says be careful with the caramel -- it is addictive.  The cake itself is sweet also, so be somewhat sparing with the caramel (unlike the above picture).

Cake Ingredients and Directions:

2 1/2 cups sifted cake flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 cup butter, soft
1/2 cup light brown sugar, firmly packed
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract

Sift together the flour, baking powder, soda, salt, cinnamon, ginger, cloves, and nutmeg. Cream butter in a mixing bowl; add brown sugar, granulated sugar, eggs, and vanilla extract. Beat at high speed of an electric mixer for 5 minutes, or until light and fluffy. Scrape bowl often. Add sifted dry ingredients, alternating with buttermilk, mixing at lowest speed just until smooth.

Pour batter into two greased and floured 8-inch round layer cake pans. . Bake at 350° 30 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Cool in pans on rack for 5 minutes, turn out of pans onto racks to cool completely.

Zoulah's Notes:  She used 3.5 ounce ramekins and baked them for 20-25 minutes.  She put less than 1/2 cup of batter in each ramekin.  IYield:  about 12 ramekins. 



Rum Caramel Sauce Ingredients and Directions:

1/2 cup heavy whipping cream
1/2 cup butter
1/2 cup dark brown sugar
1/2 cup sugar
1 teaspoon rum extract

Combine all sauce ingredients in heavy saucepan. Bring to a boil over medium heat, whisking occasionally. Cover and continue to boil for 1 minute. Uncover and boil for 3 to 4 minutes without stirring. Cool slightly before drizzling over warm cake. By cooling slightly, the sauce thickens a bit.  So if you want a thicker caramel, cool longer.  Serve cake warm.


Zoulah and Beaulah's Witchy Walk
The first thing you might notice is that Zoulah and Beaulah both have LEGS!  Since legs are new to them, they decided to take a walk in my back yard.


There they are taking in the early fall beauty.  Some flowers are still blooming.


"Oh no!  What issst that?   It must be a caaaat!, cried Zoulah.   "Drat," said Beaulah, " I hope he doesn't knock us off our pedestals!"  But no, Wolfie is a very fine, but curious cat.  Of course he had to check out two witches taking a walk in HIS back yard!

The girls love to chat with one another.  They enjoy each other's company.  They stopped to chat on the flagstone in the backyard.


Beaulah stopped to pick a rose and gave it to Zoulah to thank her for such a fun luncheon, walk and day.

Yum, how come the girls didn't share this with me when I was there? These look just luscious and I will take extras on the sauce.
I would love this today as it is so cold and dreary with snow all over the mountains!!!!! It was even snowing down here, but I think my tomatoes and basil were fine.

I make it a point to never eat caramel sauce unless warty fingers have been dipped in it. How did you know? I am impressed by the girls behavior. If I gave my sister a rose, it might still have the thorns on it. The girls are obviously better behaved than me. Love those backsides...mine should be as fancy. Honestly, cracking up. These spice cakes have caught the eye of my daughter, as she sits here laughing along with me and ignoring that it is past her bedtime. We think they sound delish. I may have to get Zoulah to come over and wake her up with a sticky caramel finger in her ear in the morning tho. Nuff said. ;)
