Like most people, I need to get more vegetables into my diet. It just seems that other things like chips and crackers are easier to grab. The other day I was reading our local paper and I came upon an article by Diann Thomas. She has been writing about her successful weight loss; she included the tip about packing vegetables in canning jars. To me, this idea was genious!
Who doesn't have canning jars they could pack with vegetables? Or if you don't have any canning jars, compared to other glass containers, they really are quite inexpensive to purchase.
"Mom, can I have some celery?" Yes, that was just my daughter asking for some celery. SERIOUSLY, I wish you could have heard her! Putting prepared vegetables in jars works because they look appealing in the jars, and you can see the vegetables. They aren't just stuffed away in the vegetable bins of the fridge.
I know I post a lot of desserts on Red Couch Recipes, but we do like our vegetables too. Thanks for dropping by today.

Exactly what I need to do. Don't we all need to get more veggies into our diets? I love them but don't get around to it and these look like treats. I will have to show Jess. Oh, wait, I will just pin them and she will see them!
What a great idea! We, too, have trouble eating the amount of vegetable we should - there's just something about the look of them in the jars that's so appealing.

I have to admit, at 7:30 at night, when I've finally plopped my tired behind onto the couch, and clicked on the t.v., I don't THEN feel like getting up to peel and chop vegetables for a healthy snack, but I have done them ahead in plastic zip bags. That seems to work fine, but yes, this does LOOK much nicer, and I imagine everyone would more quickly reach for them, perhaps looking better in glass than in baggies. I'll have to give it a try, because at least I would still be saving on plastic baggies, and I'm all for THAT! ~tina

Wonderful idea! We just returned home from vacation where we ate way too well so I'm doing this for us this week.
Joni, that's a fantastic idea! When I'm all "in control" and organized, I like to go ahead and wash and chop veggies and put them in baggies for quick grabs. This is an even better idea.
