Coconut Bliss Pops


Who can resist eating something on a stick?  This candy is about the easist thing to make; coconut, sweetened condensed milk, and Jell-O make such a fun tropical dessert.  Yesterday I made cherry and orange to "match" the colors in my tablescape, but your colors are only limited by the flavors of Jell-O.  Even though I live in Utah, the Jell-O capital of the world, I am not a huge fun of Jell-O, but I am a huge fun of these Coconut Pops made with with Jell-O.  Make them on sticks or without -- just make them!


Recipe and Instructions for Coconut Bliss Pops

1 large package sweetened coconut
1 can sweetened condensed milk
1 large package strawberry Jell-O
1/2 teaspoon almond extract

Put all ingredients into a large bowl -- add Jell-O last and do not add all at once.  You may not need all of the Jell-O package.  Mix together. Form into balls. You can use any flavor of Jell-O that you like. They really are quite striking in appearance and color. If you want to put them on sucker sticks, set the coconut balls in the open and let them dry for about an hour and then insert stick.  If you are having a problem with drooping coconut balls, dip stick  in melted candy melts and then insert in ball and put in fridge for a few minutes.  They are best if eaten within about 24 hours or so; they dry and harden in a few days.
