Pumpkin Dessert

Welcome again to Red Couch Recipes! Today a little girl in church, about 15 months and such a cutie, was licking a sucker and as she was licking she said, "num, nummie, num!" I think this pumpkin dessert is "num nummy num." There are lots of recipes similar to this, but I think this is the best. It was my Aunt Ionia's recipe. She used to make this in the fall. We had this dessert for dinner tonight.  It's easy to prepare and so "num nummie num!"

Ionia was quite the cook and she liked to entertain.  After she died my cousin Cindy put together a book of her recipes and made copies for all the cousins.  This recipe was included in the book.

Recipe for Pumpkin Dessert

1st Layer
1 package of yellow or white cake mix (reserve 1 cup for the third layer), 1/2 cup melted butter, 1 egg

Mix and pat into a 13 x 9-inch pan.

2nd Layer
3 cups pumpkin pie MIX (NOT just pumpkin), 2 eggs, 2/3 cup milk

Mix and pour on 1st layer.

3rd Layer

1 cup reserved cake mix, 1/2 cxup sugar, 1 teaspoon cinnamon, 1/2 cup softened butter

Mix and dot top of 2nd layer.

Bake at 350 degrees for 45-50 minutes.  Cool and top with cool whip.  I always like it best the second day.


Today's Thanksgiving Challenge

Today I am thankful for pumpkins!  I have always loved them; I am crazy about pumpkins!   To me, they are the bright part of fall!  I don't have much luck growing them, but I always buy a bunch.  I have nine on my porch right now.  Here are our carved pumpkins about six days after Halloween. 

In keeping with our pumpkin tradition, my son is hucking them into the compost pile.  Luckily, they all made it over the fence!  We used to live on a hill and roll them all down .  Believe it or not, we never had any volunteers the next year.

This pumpkin dessert sounds so good, especially with those three layers going in it. I don't think I've ever seen a recipe quite like this one but I'm definitely loving what I'm seeing in your pics.

I have made a very similar recipe, but boy does yours look GOOD! That's a fabulous family photo too:) I've always wanted to put together a family cookbook; what a wonderful treasure.

My sister grows those mini pumpkins every year on a little spit of land. I always forget to get the seeds!

This along with pumpkin roll with cream cheese filling is my favorite pumpkin dessert. You can keep the pie, but this I can eat until I can't move. Love it. Reminds me of Aunt Ionia too and I love that. I hope you saved me a piece! Saw Tati's post. It was fabulous! She needs to keep posting. She is so good.
