Are you ready to make a quick and easy old-time bar? Try O'Henry Bars! They whip up so quickly and they are more like a candy bar than a cookie bar. Carol, my cousin Jim's wife, used to bring these to family gatherings and they were always a favorite. Our family made these last night for a Sunday evening treat.
Recipe for O'Henry Bars
1 cup light corn syrup
1cup sugar
1cup peanut butter -- don't use a "natural" peanut butter
4 cups Rice Krispy's or Special K cereal
1 cup milk or semi-sweet chocolate chips
1 cup butterscotch chips
In large saucepan, combine corn syrup and sugar; bring to boil. Remove from heat, add peanut butter and stir well. Add cereal. Press mixture into 13-by-9-inch pan. In microwave melt chips together, about 2 minutes, stirring after about 1 minute. Spread chocolate over rice krispy mixture. Cool and cut into bars. While chocolate is drying, run a fork through the chocolate to make the design; doing this makes the bars a bit more decorative. Makes about 15 to 20 bars.
I love it that all of the ingredients in these bars can be stored in your pantry and ready to go!

I remember these from when my mom used to make them! I totally forgot all about them too. I loved these as a kid. Of course, who wouldn't? Chocolate on a rice Krispie bar? Heaven! Thanks for bringing back some "sweet" memories!

I have been making these for about 40 years now...they are SO SO good! :D
I make these without the chocolate and just drop them by the spoonful. I like the idea of adding chocolate (to almost anything really). I always eat way too many!
This one is going straight into my collection because I just know that I will love it. I also know that it will be dangerous to have these sitting around in a tin.
These bars are one of my weaknesses! I can't leave them alone. I remember making them when we were young. The flavors, the crunch and the smoothness of the chocolate do me in.
I like how you used the fork to make a pattern on the chocolate.

These are my favorite childhood bars. My mom used to send them in a care package when I was in college and I would share them with my roommates. I love the way you patterned the chocolate on top, too! In my experience, the grownups love these as much as the kids do.
